A delicious cuisine consists of the elements of colour, aroma and taste. Aroma is associated with the kind of oil used. It is therefore important to use the correct oil in an appropriate amount. I would like to have a sharing with you.

Several kinds of oil are available in my kitchen! Olive oil is light in taste, suitable for a Western cuisine. For Chinese dishes, canola oil should be used for pan-frying and deep-frying. Strongly flavoured sesame oil is perfect for chilled Chinese appetizers!

Health is the most important factor for choosing oil. Oil contains saturated fatty acids and unsaturated fatty acids. Oils containing a higher level of saturated fatty acids are considered unhealthy, e.g. butter, coconut oil and palm oil. Conversely, unsaturated fatty acids help to lower the cholesterol level. Corn oil, olive oil, soybean oil and peanut oil, all containing a higher level of unsaturated fatty acids, are healthier choices.

Besides cooking with healthy oil, we should also use low-fat Cooking Method. Different oils contain the same energy, i.e. one teaspoon (5 g) provides 45 kcal of energy. Excessive consumption of healthy oil will also lead to excessive intake of energy, resulting in obesity. I encourage you to prepare food by boiling in water, steaming, stewing, double boiling and baking instead of frying.

Finally, let me share the following healthy recipe for warm tomato. The dish is an appetizer seasoned with olive oil which is easy to make.

Warm Tomato ( Serves 1 )

Ingredients:
Tomato (medium size) 1 piece
Virgin olive oil 1 teaspoon
Sesame sauce 2 teaspoon
Ketchup A little amount
Paprika To taste
Herbs (e.g. chopped basil leaves) A little amount

Seasonings:
Lemon (small size) Half a piece (juiced)
Corn starch 3 tablespoon
Ground black pepper A little amount
Olive oil A little amount

Cooking Method:
1. Soak the tomato in hot water and peel it. Put the peeled tomato on a small dish.
2. Add olive oil, followed by sesame sauce. Add a little amount of ketchup (the size of a 50-cent coin) and sprinkle paprika.
3. Steam the tomato for about 6 minutes until it is warm.
4. Sprinkle herbs as garnish and serve.
