Mango Tsang - An Advocate for Healthy Chinese Cuisine Mr. Mango TSANG, the Chinese Kitchen Operation and Development of a Hotel Group Manager, has been an active advocate of healthy Chinese cooking. He said that the tripartite collaboration of management and workers of the industry as well as the customers is the key to the success of the Campaign. He hopes more restaurants would register for the scheme.

Chinese cuisine has a long history and it is no easy task to twist traditional dishes. Mango emphasized that "Small changes matter" and reminded chefs that they could make little adjustments to the ingredient list to raise the healthiness of their dishes.

"May You Prosper" (a fish dish): stream the fishes instead of stewing or braising them.

"Everything Goes Well" (Bamboo fugus and pigeon fillets): replace bamboo fugus and pigeon fillets with scallop.

"Bamboo Presages Peace and Wellbeing" (braised ham with asparagus, carrots and other vegetables): drop the ham and turn it into a vegetarian dish.
