Barramundi Roll with Lime

Ingredients (Serve 2):
Barramundi | 1 |
Lemongrass, sectioned | Some |
Galangal (a ginger) | Some |
Lime | 1 |
Chili peppers | 1-2 |
Water | Some |
Lemon leaves | 2 |
Mint leaves | 3 |
Seasonings:
Salt | 1/4 teaspoon |
Cooking Method:
1. | Wash and bone the fish. Set aside. |
2. | Wash the lemongrass and galangal. Blanch, let stand. |
3. | Squeeze half of the lime for its juice, and slice the other half. |
4. | Put the lemongrass and the galangal on the fish, and roll into a wrap. Set aside. |
5. | Heat the frying-pan, stir-fry the chili peppers until the smell comes out. Add the water, salt, lemon leaves and lime juice. Bring it to the boil, pour it on the fish, and steam for 7 minutes. |
6. | Garnish with lime slices and mint leaves to serve. |
