Sandwich with Fresh Prawns and Eggplant Paste

Ingredients (Serve 1):
Eggplant | 1/4 |
Prawns | 3 |
Fresh tomato, skinned and diced | 10g |
Olive oil | 3g |
Baguette | 2 slices |
Lettuce | 20g |
Seasonings:
Salt | 1/5 teaspoon |
Cooking Method:
1. | Preheat the oven to 200°C. Bake the baguette till golden brown. Let stand. |
2. | Wrap the eggplant with aluminum foil. Bake in oven at 200℃ for 30 minutes. Then peel and mash the eggplant to form a paste. |
3. | Put the prawns in boiling water and simmer till thoroughly done. Peel and let stand. |
4. | Mix the eggplant paste with the tomato dices, salt and olive oil well. Spread along the baguette. Add the lettuce and prawns. Serve. |
