Ground Flaxseed and Chicken Breast Salad on Multi-Grain Sandwich
Sylvia LAM, Chairlady of Hong Kong Dietitians Association, said "Flaxseed is a rich source of Omega-3 fatty acid, which can improve blood lipids. Chicken breast contains a lower level of fat than other meats but is rich in protein. It helps one feel full."
Ingredients (Serve 1):
Chicken breast60g
Ground flaxseed8g
Low-fat salad dressing4 teaspoons
Romaine lettuce leaf1
Tomato, sliced1/2
Multi-grain sourdough bread2 slices
Salt1/5 teaspoon
Cooking Method:
1.Preheat the steamer to 65°C.
2.Season the chicken breast with salt. Steam for about 20 minutes until thoroughly done. Let cool, then slice. Set aside.
3.Mix the ground flaxseed and low-fat salad dressing. Add the chicken breast slices and mix well.
4.Place the lettuce leaf and tomato slices on a slice of bread, and then spread the chicken breast over. Top with the other slice of bread and serve.
