Kebab with Mutton and Mint
Grilling is one of the cooking methods as mutton on the grill can remove some of the fat, natural spices give variety in taste. It is enjoyable to eat mutton with crisp and fresh salad vegetables.
Ingredients (Serve 1):
Mutton | 60 gm |
Red Shallot | 20 gm |
Olive Oil | 1/5 teaspoon |
Lettuce | 40 gm |
Tomato | 3 pieces |
Lebanese Bread | 60 gm |
Salad Vegetables | 20 gm |
Seasonings for Mutton:
Coriander | around 2 teaspoons |
Ground Nutmeg | around 2 teaspoons |
Paprika | around 2 teaspoons |
Ground Garlic | around 2 teaspoons |
Ground Cumin | around 2 teaspoons |
Onion | 6 pieces |
Parsley (finely chopped) | around 2 teaspoons |
Ground White Pepper | around 5 teaspoons |
Salt | 1/2 teaspoon |
Cooking Method:
1. | Marinate mutton with seasonings. Grill the mutton till done. |
2. | Thinly slice the mutton. |
3. | Shred red shallot and stir-fry with olive oil until tender. Set aside. |
4. | Cut lettuce into sticks and cut tomato into strips. Set aside. |
5. | Stuff mutton, shallot, lettuce and tomato in the Lebanese bread and roll up. Bake for 2 minutes. |
6. | Garnish with salad vegetables. Serve with mint yoghurt. |
Mint Yoghurt - Ingredients:
Mint leaf | some |
Low-fat Plain Yoghurt | 3 teaspoons |
Cooking Method:
1. | Shred the mint leaves, mix with low-fat yoghurt. |
