Stuffed Morels with Homemade Black Tiger Prawn Paste
Ingredients: (To serve 4)
Fresh black tiger prawns (6 pieces) 160 g
Morels (extra large) (6 pieces) 10 g
Seasonal vegetables (3-4 pieces) 50 g
Seasonings:
Soya bean oil 5 ml
Salt ⅕ teaspoon
Starch solution Some
Morel water Some
Broth (Low Sodium) Some
Cooking Method:
1. Peel, devein and dice the fresh black tiger prawns.  Pulse them to a prawn paste and set aside.
2. Soak and clean the morels.  Drain and set aside.  Keep the morel water for later use.  Wash the seasonal vegetables.  Drain and set aside.
3. Stuff the prawn paste into the morels.  Steam together with the vegetables until fully cocked.
4. Pour the morel water and broth into a pan, and bring them to a simmer.  Season with salt.  Thicken with starch solution and soya bean oil, and then dish up.
