White Radish Rings with Greens and Dragon Fruit
Ingredients: (To Serve 5)
White radish 14 taels
Spinach 10 taels
Dragon fruit ½
Oats 5 maces
Baby corn 2 taels
Snow ears 2 taels
Cloud ears 2 taels
Elm fungus 2 taels
Matsutake mushroom 2 taels
King oyster mushroom 2 taels
Whipping cream 1 teaspoon
Milk 1 tablespoon
Seasonings:
Salt 1 teaspoon
Sugar ½ teaspoon
Olive oil 1 teaspoon
Canola oil 1 teaspoon
Cooking Method:
1. Use a mold to cut the white radish into rings. Add the salt and sugar in the boiling water. Simmer the white radish until thoroughly cooked. Set aside.
2. Blanch the spinach until cooked, then cool it down with cold water. Blend the cooled spinach and set aside.
3. Peel and cut the dragon fruit into wedges. Heat the oats in a wok without oil until aromatic and golden. Set aside.
4. Blanch the baby corn, snow ears, cloud ears, elm fungus, matsutake mushroom and king oyster mushroom. Stir-fry with canola oil until the ingredients are thoroughly cooked. Set aside.
5. Mix the spinach juice, whipping cream and milk together into a sauce. Heat the sauce and pour it on a plate. Place the white radish rings over the sauce, then stuff them with the stir-fried mushrooms. Decorate with the dragon fruit and oats, then pour the olive oil over the dish.
