Winter melon and mixed vegetable are rich in dietary fibre, they do not
only stimulate bowel movement but also maintain gastrointestinal health.
Ingredients: (To Serve 4)
Winter melon | 1/2 catty (320g) |
Frozen mixed vegetables | 1/2 cup |
Minced pork (lean) | 2 taels (80g) |
Water | 4 cups (960 ml) |
Marinade for the pork:
Salt | 1/8 teaspoon |
Sugar | 1/4 teaspoon |
Shaoxing wine | 1 teaspoon |
White pepper | A pinch |
Seasonings:
Salt | 1/4 teaspoon |
White pepper | A pinch |
Cooking Method:
1. | Marinate the minced pork. |
2. | Rinse the winter melon. Remove the skin and seeds. Dice the winter melon. Rinse and defrost the frozen mixed vegetables. |
3. | Boil the water. Add in the winter melon. When it reaches the boiling point again, turn to medium heat and cook the winter melon until soft (around 30 minutes). Add in the minced meat and mixed vegetables and boil for another 15 minutes. Add the seasoning to taste. |
