Sweet Corn Balls
Ingredients: Serve about 4 Persons
Glutinous rice, uncooked1/2 cup
Lean pork5 taels
Minced dace fillet2 taels
Steamed Chinese mushroom3 pieces
Cooked corn kernels1/2 cup
Cooked peas1/3 cup
Seasonings:
Salt1/2 teaspoon
Soy sauce1/2 teaspoon
Sesame oil1 teaspoon
Sugar1 teaspoon
Ground pepperA little
Preparation:
1.Wash the sticky rice and soak in water for four hours. Drain and set aside.
2.Mince lean pork and fish. Dice mushrooms and add sweet corn and peas. Mix with seasoning.
3.Work the mixture into small balls (size of a lychee).
4.Roll the meatballs in the sticky rice till the rice covers their surface. Place them on a plate and steam for ten minutes.
Smart Tips:
This is a high protein and low fat dish. It is good to serve as a snack or with rice. Sweet corn kernels and peas give a bright colour and is rich in fibre, keeping our digestion system healthy.
