Stir-fried Chicken with Sweet Peppers and Dragon Fruit

"3 Less" and "More Fruit and Vegetables" Dish

 

Feature

Dragon fruit is a fruit that contains relatively less sugar but can bring out the sweetness of the dish. It contains anthocyanins, an antioxidant to fight off free radicals.

Ingredients to serve 4

Soya oil

2 teaspoons

Red pepper

3 slices

Green pepper

3 slices

Yellow pepper

3 slices

Chicken fillet, skinned and sliced

Dragon fruit, diced

1

 

Seasonings

Salt

1/2 teaspoon

Sugar

1/5 teaspoon

Shaoxing wine

1/2 teaspoon

 

Cooking Method

  1. Heat the wok. Add oil. Pour in all the sweet peppers, stir-fry briefly. Remove from heat and set aside.
  2. Stir-fry the chicken slices. Add salt and sugar. Pour in the sweet peppers again and stir-fry together. Pour in the Shaoxing wine.
  3. Lay dragon fruit flesh all over the plate. Put on chicken and sweet peppers and serve.
