Pork Chops with Tomatoes and Onions
Ingredients (Serve 4):
Lean pork chops, boned400g
Tomatoes2 (approx. 250g)
Onion, medium1 (approx. 150g)
Vegetable oil1 tablespoon
Marinade:
Salt1/2 teaspoon
Soy sauce1 teaspoon
White peppera pinch
Sugar1/2 teaspoon
Corn starch1/2 teaspoon
Egg white1
Thickening:
Soy sauce1/2 teaspoon
Ketchup2 tablespoon
Sesame oil1/2 teaspoon
Sugar1 teaspoon
Corn starch1 teaspoon
Water3 tablespoon
Cooking Method:
1.Rinse and pat dry the pork chops. Pat with the back of a chopper and cut into small pieces. Leave to marinate for about 1/2 hour.
2.Rinse and cut the tomatoes into wedges. Skin and cut the onion into small pieces.
3.Heat 2/3 tablespoon of oil and fry the pork chops until golden.
4.Use the remaining oil to fry the onion. Add in tomatoes and the thickening sauce and cook gently. Add in the pork chops and stir-fry until done.
Nutrition / Preparation Tips:
This dish is colorful and rich in protein, vitamin A, C and dietary fibre, which can help to enhance the immune system.

Adding egg white to marinate the pork chops can produce more tender meat.

Using a non-stick wok / pan to fry the pork chops cuts down the amount of oil needed
