I consider that breakfast is the most important main meal. After sleeping for the whole night, a person has already digested the food taken in last night and thus has a lower blood sugar level at the time of waking up. Having breakfast can increase the blood sugar level to prepare for activities for the whole day and enhance the thinking ability. Therefore, I eat breakfast every day.

My breakfast is simple, which is mainly made up of fruits as well as grains and cereals, e.g. a bowl of wheat flakes with skimmed milk, a banana and an apple.

Busy working people prefer to sleep more rather than prepare breakfast at home. However, food items sold in restaurants are often high in sugar, salt and fat. For example, coffee, milk tea, fried noodles, hamburger, and sandwich or instant noodles with sausage, luncheon meat or ham etc.

In fact, there are healthier choices in restaurants. Let me share with you.
  • Preferably choose food items with grains and cereals as the main Ingredients, e.g. bread, macaroni, congee and wheat flakes.
  • Choose more fresh and low-fat food items, e.g. fresh beef macaroni and lean meat congee.
  • Request the restaurant not to add butter for sandwich. Preferably choose sandwiches with vegetables, e.g. tomato and egg sandwich.
  • Order beverages with "less sweetened" or "no added sugar".

Finally, I would like to share the recipe for pumpkin sandwich. The Commissioner of Police often had this healthy sandwich when I worked with him some years ago.

Pumpkin sandwich

Ingredients:
Pumpkin 300 g
Oatmeal bread some slices

Cooking Method:
1. Cut the pumpkin into slices of thickness of 2 - 3 mm. Remove the peel.
2. Put 3 – 4 pumpkin slices in the microwave oven. Sprinkle 2 teaspoons of water on the slices and bake with high heat for 1 minute.
3. Take out the pumpkin slices. Put 2 pumpkin slices between 2 oatmeal bread slices. Cut and serve.
