Ingredients (Serve 1):
Sole Fillet | 1 piece |
Capsicum (tricolour) | 1/2 piece each |
Celery | 1/2 stalk |
Onion | 1/4 piece |
Cucumber | 1/2 piece (for garnishment) |
Seasonings:
Table Salt | 1/4 teaspoon |
Olive Oil | 1 teaspoon |
Ground White Pepper | 1/4 teaspoon |
Parsley (dry) | 1/4 teaspoon |
Ground Cumin Seed | 1/4 teaspoon |
Egg White | 2 pieces |
Plain Flour | 2 teaspoons |
Cooking Method:
1. | Marinade the fish fillet with the Seasonings. Lightly coat with some plain flour. Set aside. |
2. | Rinse the capsicums, celery and onion. Blend into juice. Set aside. |
3. | Rinse, deseed and slice the cucumber. Set aside. |
4. | Heat up a frying-pan, pan-fry the fish fillet over low heat until done. Transfer to a plate. |
5. | In the frying pan, bring the vegetable juice to a boil. Pour it over the fish fillet. Garnish with the cucumber slices and serve. |
